Ingredients
- 1 1/2 cups (480 g) cooked and drained pumpkin cubes (or squash)
- 1 cup (200 g) firmly packed AJ’s Brown Sugar
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp allspice (optional)
- 3 slightly beaten eggs
- 1 cup cream or evaporated milk
- 9 inch pie shell

Preheat oven to 220 °C (425°F)
Mix pumpkin, sugar, salt and spices with a puree mixer till there are no pieces. Add eggs and cream, mix thoroughly. Pour into an unbaked pie shell.
Bake about 40 – 45 Minutes until a knife inserted in the center comes out clean.
Serve with whipped cream
